After visiting the ruins of Clonmacnoise Monestary, my friend and I searched for some place to stay. It was dark and rainy. By some miracle, we stumbled upon Maria's bed and breakfast. No sooner than I had put down my luggage, my friend called me down to the dining room. It turns out that Maria had put out slices of warmed apple pie and tea and coffee us. Well, I am on a diet, so I thought I would just take a bite or two to be polite. Moments later, it was all I could do not to lick the pattern off the china plate. It was easily the best apple pie I had ever eaten (sorry Mom). Breakfast the next morning was just as delicious and quite generous. Maria keeps an impeccably clean home, and the suite had everything someone could want. No doubt that is because she has hosted guests for over 20 years. (I write, "hosted guests" rather than "run a B&B" because we felt so welcome and more like friends than customers.) I couldn't think of a thing I would want that wasn't already there. When I return to Ireland, I hope to stay there again.
