"I stayed at a rather old and somewhat run-down hotel these past two days, but it had two glorious periods in history: first, it was built as a residence by General Li Jiezhi; second, it was transformed into a star-rated hotel through urban renewal. The current owner said that preserving it is not easy, as the maintenance costs of an old building are very high. Any building needs to attract people for its upkeep, and he hopes that more people will discover it to slow its decline. In addition, the chef and the waitresses deserve praise; they are all very warm and friendly Hakka people. The chef even specially made a childhood-remembered version of stir-fried pork belly with preserved vegetables according to my request, which was delicious. Unfortunately, I didn't get to try the taro root stir-fried with pork intestines that I wanted. The waitresses were also very honest; regardless of whether you drink or not, they always brewed a pot of Hakka-style Dancong tea. Although it's a hotel, I prefer to think of it as a guesthouse because it's run by a group of warm and friendly people. And Hakka cuisine is always delicious; I highly recommend everyone to try it."
